I am convinced my ISP is blocking dns.watch ... I can view the site, but I can't use it for DNS in any configuration (at the router, at the pc manually, in my pi-hole .... )
Does it sound tinfoilhat-ish?

So I actually just setup my own (very basic caching/forwarding) dns server. and configured the PiHole to use that.
Fuck these ISP's.
Holy shit - I still find it hard to believe .... if I set dns.watch, quad9 or even frkn OpenDNS as the dns resolver in my network - nothing works.
It's crazy.
(for clarity) If I set my router to use the dns that is provided by the ISP - DNS and web browsing works just great. So I *know* the problem is only when I configure one of these others.
...
Anyway, using my own dns server is doing great so far ...
