Carne Adovada is pork, slow-cooked in a red chile sauce for, oh, all day. Good in tacos, scrambled eggs, tamales, even on a bun as a sandwich. There's many variations around the US southwest, but natch ours is the best. https://www.seriouseats.com/recipes/2012/12/carne-adovada-adobada-chili-braised-pork-recipe.html
