@yojimbo This #vegan brunch from last week came with tofu scramble as an egg substitute. I I have no idea what makes it yellow. Perhaps saffron? 🙂

@codewiz @yojimbo I use Vegan Richa's recipe for vegan tofu egg salad and she uses turmeric for color. I make a batch on Sunday and make sandwiches all week. It is incredible. Warmed up it makes a great scramble and is great in a breakfast burrito. The black salt is crucial and you can get it very inexpensively from any Indian market.
