@freedcreative Buckwheat's profile is quite the same as wheat's profile. It's just eating a stack of carbs (Wiki screencaps). 2 muffins ~ 1 meal in kcal, not great.
Also, as a rule of thumb, don't pay much attention to micronutrients. Most of the times we don't know about their quality or how much we'll absorb (bioavailability). Unless you're under some medical prescription, you'll be getting what you need if you eat enough veggies, fruits, nuts, legumes (and yes, some whole grains) + B12.
