    Legitimately healthy muffin.

No refined fat. No refined sugar. Sweetened mildly with fruit, cardamom and cinnamon. Buckwheat flour, bound with banana, risen with baking powder. All plant based. Solid macro and micro nutrient profile. And of course, delicious.

@freedcreative I could argue! Healthier not healthy. Anyway, great as sporadic treat :blobmiou:

@freedcreative Nah, not "harmful", just not as "healthy" as what it's really healthy. It's the flour. A bunch (small in this case) of caloric-dense, low-nutrient thing. It gets worse if it's white flour. I agree with you that it depends on your requirements, if you need its glucose peak for, say, a sport activity. But then again, there are better alternatives for that (dried fruits, nuts...).

@tagomago I would counter argue - it depends on what your health requirements are. These are proving quite helpful for me atm.

That said, what do you think may be harmful in this?

@freedcreative Buckwheat's profile is quite the same as wheat's profile. It's just eating a stack of carbs (Wiki screencaps). 2 muffins ~ 1 meal in kcal, not great.

Also, as a rule of thumb, don't pay much attention to micronutrients. Most of the times we don't know about their quality or how much we'll absorb (bioavailability). Unless you're under some medical prescription, you'll be getting what you need if you eat enough veggies, fruits, nuts, legumes (and yes, some whole grains) + B12.

@tagomago Ah, it’s not refined wheat flour though, it’s buckwheat flour, which has quite a good nutrient profile. It’s a psuedocereal, like quinoa, rather than a grass seed. Nutritionally it’s more like a lower fat higher carb version of ground nuts.

Good B vitamin content, good mineral content, 15% of carbs from fiber, 95 kcal from flour in one 235 kcal muffin (rest is fruit, nuts, hemp seeds), well rounded amino acid profile. Also high in potentially helpful flavonoids quercitin and rutin.
