The second floor of the Mercato Centrale is a food court with small outlets specializing in pasta, pizza, panini, wines, aperitifs and so on...
They have various types of Pecorino Toscano, my favorite cheese. I like it more aged, like the one in the front middle-right.
This particular one is described as "impagliato" (covered in hay), something I had never seen before.
Also inside this market, I found this fantastic shop of cheese and cured meats.
I bought one with "pappa al pomodoro" and they're warming it up with a kitchen knife jammed into the grill to keep it open 😂

So many varieties of "pizza al taglio" 😋
Literally, it means "pizza by the cut". It's commonly found in bakeries, but this is a specialized shop.
You can load pizza al taglio with all sorts of delicious ingredients, but when the dough is good, my favorite cuts are the simplest: margherita and marinara, which is vegan.
This time, I tried that one with zucchini and tomatoes on the left of the marinara 😋
