Anyone out there do repairs on commercial ovens? If the oven seems to fail to maintain temperature sometimes and gas pressure to the oven is fine, is it likely to be:
- flame sensor
- temperature control board
- thermostat itself
- gas valve
- something else?
It seems criminal to be charged $100/hr for something I could replace myself... if I could just find some goddamn information... there's like zero public discussion on commercial oven repairs on the internet.
Thanks, boomers.-

@kaniini that's my gut feeling too. And there are two thermostat parts for this oven...

https://www.partstown.com/blodgett/bl58025
and the prices... vary by hundreds based on where you order -

@shellkr @kaniini nah this isn't dangerous. And I have experience working with gas as well, but I won't even be touching the gas line or valves. These parts are easily swapped out behind a few screws holding on a panel.
